Many people do not know the true origin of waffles. Invented in Belgium, the dish conquered Europe and was adopted by Americans, especially for breakfast. Today there are versions for all tastes: sweet or savory, with crispy or fluffy dough, plain or stuffed. And, during the Arraial Chefs de Pontathe Belgian chef Alexandre Binard brings the Amazonians a piece of his country of origin with the traditional waffle. The event takes place on July 5, 6 and 7 and admission is free.
The chef explains that there are two traditional types of Belgian waffles: the Liège, usually oval, caramelized and covered with sugar lumps, and the Brusela, rectangular, simpler and lighter. Often they are served with chocolate toppings, fruit, ice cream, and everything else you are entitled to.
"As I know that people from Amazonas are fans of sweets, I prepared a menu that brings combinations of the Liege Waffle with Chantilly, and with Chocolate and Chantilly, the Bruselas Waffle with Chocolate and Chantilly, and an option with a more regional touch, with Cupuaçu jam with Chantilly", said Chef Binard, who has been in Manaus for about three years.
Excited about another edition of the arraial, Alexandre says that gastronomy has always been part of his life. "I was lucky to have an Italian mother, who loved discovering new cultures, and thus I traveled a lot during my childhood and adolescence, got to know many different places and tried many different flavors of international cuisine," he says.
